You'll have to forgive my intermittent posting at the moment. My book, Going Vegan, is almost done, and I'll be back to regular posting once it's out. In the mean time, do give this quick and easy recipe a try.
This is a very quick and delicious compote that you can make out of a packet of frozen berries from the supermarket. It takes about 25 minutes, plus about an hour or so of chilling time (that is if you want it chilled, because you can also have it warm). It goes with a variety of things. Try it with my homemade granola and some yoghurt. You can also spread it on toast, or simply spoon it into your mouth! It’ll keep in the fridge for a few weeks, so you can enjoy it any time.
Cooking time: 25 minutes. Cooling time: about 90 minutes.
Makes 1 medium jar.
- 1 x 500g pack frozen summer berries
- 200g unrefined sugar
- 1 tsp vanilla extract.
Put all the ingredients into a saucepan and bring to the boil, stirring occasionally. You will not need any additional liquid as plenty will come from the berries. Simmer gently for about 25 minutes, until the compote is thick and easily coats the back of a spoon. Turn off the heat and allow to cool fully before storing in the fridge.
